Laura Rotger and Fel Moll: the payeses who bring flavour to the Sagitario experience

A story of countryside, dedication and local flavour in the heart of Menorca

At Sagitario Hotels, we believe people are the heart of every experience. And we’re not just talking about the team you’ll meet in our hotels, but also those who, from the countryside, help make everything more authentic and local.

Today we’d like to introduce you to Laura Rotger and Fel Moll, the payeses (farmers) of the lloc (traditional Menorcan farmstead) of S’Aranjassa — the farm that supplies us with artisanal Mahón cheese, one of Menorca’s most iconic flavours.



Love for the land


Laura, who has been passionate about the countryside since the age of 14, tells us how this adventure began in July 2023:



"It’s a new project that we’ve embraced with great enthusiasm."



Fel and I run it as cultivating partners, alongside the lloc’s (traditional Menorcan farmstead) owners, Sebastià Triay Fayas and his wife, Tònia Amorós. We also count on the support of two workers to help manage the estate.


The farm spans 80 hectares of arable land, with 69 Friesian cows for milk production, 5 pigs fed with leftover whey from the cheese-making process, as well as 52 sheep and 30 hens.

From the land to your table


“Our specialty is cheese, but we also produce cured meats. We want people to appreciate what’s behind every bite,”
explains Laura.

During their visits, guests can learn how the products are made, understand the time and care each step requires, and truly taste the essence of artisanal work.


Teamwork

Laura and Fel share the tasks, but when needed, they do it all together:

"I handle the shop, the orders, the cheese… Fel takes care of the animals. And together, we make the cheese. We complement each other really well."


Laura also shares a powerful message:

"Even though many believe farm work is just for men, we women payeses (traditional farmers) can do it all. With determination and passion, there’s nothing we can’t do."
